Apple Crisp

This Apple Crisp recipe is a wonderful recipe to serve up at your next gathering with family or friends. Warm, comforting, sweet, and delicious, it’s delicious all on its own or served up with the banana or coconut ice cream recipes on my blog.

Apples offer us not only physical benefits but also healing on a spiritual level. Apples teach us not to get burned by the frost of insensitivity from others. Unlike crops that risk damage from autumn temperatures, many apple varieties continue to grow and ripen through the cooler months, protected by their frost-resistant skin. When a cold front from a friend, lover, or colleague comes upon you, take heed from the apple and draw a protective shield around yourself until conditions improve.

Apple Crisp

Ingredients:

Filling:
4 red apples, chopped
1 tsp cinnamon
2 tbsp lemon juice
1/2 tsp lemon zest

Topping:
1 1/2 cup gluten free rolled oats (optional: sub 1/2 cup oats for 1/2 cup almond meal for a more biscuity texture)
1 cup chopped pecans or walnuts
1/2 cup shredded coconut
1 tsp cinnamon
1/2 tsp ground ginger (optional)
1/4 tsp ground nutmeg
1/3 cup maple syrup
1/2 cup coconut oil

Directions:

Preheat oven to 325F. Place the diced apples in a 11x7 baking dish (or similar). Add the cinnamon, lemon juice and zest and mix well.

In a medium-sized bowl, combine the oats, pecans, coconut, cinnamon, ginger, nutmeg, maple syrup and coconut oil. Mix well, then place on top of the diced apples.

Place in the oven and bake for 40-45 minutes, until the top is browned and the apples cooked through. Let sit for 10 minutes at room temperature before serving.

Serves: 6-8

Apple Butter

This creamy and delicious apple butter is the perfect versatile spread to eat with almost anything! Enjoy it alone or as a dip for apples, pears, bananas, celery, cucumbers, sweet potatoes or a healthy cracker of your choice. Or try spooning it onto fruit salad, a smoothie bowl, gluten free oatmeal or the wild blueberry pancakes on the Medical Medium blog.

Never underestimate the power of an apple. This fruit’s anti-inflammatory properties make it a top pick when you’re faced with practically any illness. Encephalitis (brain inflammation), IBS (intestinal inflammation), and viral infection (which can result in nerve inflammation) are just a few conditions in which apples can play the critical nutritional role of calming your system by reducing viral and bacterial loads that create inflammation.

Apple Butter

Ingredients:
12 medium-sized red apples, cored and roughly chopped
1 cup raw, unsweetened apple juice
2 tbsp fresh lemon juice
1 1/2 tsp cinnamon
1/2 tsp ground cloves
1/2 tsp ground nutmeg
1 tsp alcohol free vanilla extract (or 1 vanilla bean)

Directions:
Place all the ingredients in a slow cooker on very low heat and cook for about 10-12 hours, until dark and reduced. Transfer to a blender or blend until smooth using an immersion blender in the pot. If you would like the mixture thicker, transfer it to a pot and cook, uncovered, for 15-20 minutes to thickness of your liking. Let cool and store in jars in the fridge.

To cook without a slow-cooker, place all the ingredients in a heavy-bottomed saucepan over low heat and cook, stirring occasionally, for 8-10 hours, until dark and reduced. Transfer to a blender or blend until smooth using an immersion blender in the pot. If you would like the mixture thicker, transfer it to a pot and cook, uncovered, for 15-20 minutes to thickness of your liking. Let cool and store in jars in the fridge.

Full of flavor and just the right amount of crunch, this delicious salad is a great way to get more leafy greens and fruit into your diet. Massaging the kale with avocado tenderizes the green, while the apple and pecans give the salad just the right amount of crunch. This recipe would be great on a fall or winter holiday table or simply serve it up any day of the week. For a lower fat recipe, you can reduce or omit the pecans and bring in crunchy vegetables of your choice such as finely chopped celery, carrot, or cabbage.

Kale & Apple Salad

Ingredients:
4 cups kale, destemmed and roughly chopped
1 small avocado (about 1/2 cup)
1/2 tbsp raw honey
1/4 cup lemon juice
1/2 tsp sea salt, more if needed
1/2 tsp black pepper, more if needed
1/2 cup pecans, roughly chopped
1/2 cup dried cranberries
2 large red apples, such as gala or fuji, chopped

Directions:
Place the kale, avocado, raw honey, lemon juice, salt and pepper in a large bowl. Massage the avocado into the kale, then add the pecans, cranberries and apples. Mix well and serve.

If you love a good crunch, these sweet baked apple chips are for you. They make a perfect healthy alternative to fried potato chips and crackers with unhealthy ingredients. Plus they’re fat free, which means your liver will be thanking you for the break from processing fats. With less fat to process, it can better help you to heal from countless symptoms and conditions.

Apples are the ultimate colon cleanser. As the pectin from an apple moves through your gut, it collects and rids your body of microbes such as bacteria, viruses, yeast, and mold. It also gathers and expels putrefied, impacted protein and debris that’s been hiding in intestinal pockets and feeding colonies of harmful bacteria such as E. coli and C. difficile. This makes apples an excellent antiproliferative for healing SIBO (small intestinal bacterial overgrowth) and other digestive disorders.

Baked Apple Chips

Ingredients:
4-5 red skinned apples, like Gala or Fuji
1.5 tsp ground cinnamon
1 tsp ground ginger

Directions:
Preheat oven to 200F. Remove the stem of the apples. Using a mandoline or a very sharp knife, cut the apples into 3-6mm discs.

Place a sheet of parchment paper on two large baking sheets and layer the apple slices on top. Sprinkle with cinnamon and ginger, then turn the slices over and sprinkle with more.

Place the baking sheets in the oven and bake for about 1 hour, then flip the apples to the other side and continue cooking for about 1 hour to 90 minutes more, until light and crispy. Let cool before serving. Best kept at room temperature in an airtight container.

Makes about 50-60 chips

This hibiscus lemonade is just as gorgeous as it is delicious. It’s the perfect show-stopping beverage for your next gathering, and it’s also simple enough to enjoy anytime. Try freezing it into ice cubes and keeping them on hand to make a beautiful hibiscus-infused water on demand.

In Liver Rescue, I share how each of these ingredients can support you and your loved ones in healing. Let’s take a look…

Hibiscus: The unique anthocyanin compound that gives hibiscus its red coloring helps rejuvenate the liver, bringing it back to life by cleaning mucus off cell membrane walls and improving the liver’s ability to perform its responsibilities. This herb is also a gallbladder rejuvenator—it cleans off gallbladder walls—and improves the liver’s personalized immune system.

Lemons (and limes): Improve hydrochloric acid production as well as bile production and potency. Contain micro mineral salts that break down pathogens such as unproductive bacteria, mold, yeast, and fungus to help protect your liver’s immune system. The rich calcium levels in lemons and limes binds to the vitamin C within them, and both of these enter into the liver, where they waken a stagnant, sluggish, fatty liver, helping loosen and disperse fat cells. Hibiscus Lemonade

Ingredients:
4 cups water, divided
2 teaspoons dried hibiscus (see Tips)
½ cup fresh lemon juice
4 tablespoons raw honey (see Tips)

Directions:
Bring 1 cup of water to a boil in a small saucepan. Remove the water from the heat and add the dried hibiscus. Allow the resulting hibiscus tea to steep for at least 10 minutes, and then strain the tea into a mug and place it in the fridge to cool.

In a medium bowl, whisk together the remaining 3 cups of water with the lemon juice and honey until the honey has completely dissolved and a smooth lemonade has formed. When the hibiscus tea has cooled, stir it into the lemonade base and enjoy!

Tips:
* Store-bought tea bags can be used as well when loose dried hibiscus is not available. Use 1 hibiscus tea bag in place of 1 teaspoon of dried hibiscus.

* Alternatively, maple syrup can be used in place of honey. Start by using 3 tablespoons of maple syrup and adjust until the desired sweetness is reached.

* The recipe above is for a beautiful, light lemonade that anyone can enjoy. If you’re looking for even more medicinal benefits, try using up to 2 more tablespoons of dried hibiscus for a stronger hibiscus lemonade with a powerfully tart flavor.

Get your kids involved and pick your own favorite toppings. As you crunch away on these delicious caramel apples, know you are feeding your body a wealth of healing nutrients.

Apples open up a part of you and change the energy within and around you to attract happier and brighter things. They can bring back your vibrancy, elevate you, lighten your spirit, and make you more energetic. This is because for thousands of years, we’ve stored apples to get us through the winter months. The fruit is a ray of hope that puts us in touch with the good life. It’s instilled in our bodies that when the outside world seems bleak, an apple can reconnect us to life, rebirth, sunlight, and summertime.

Raw Caramel Apples 

Ingredients:
1 cup fresh dates, pitted
Vanilla bean seeds from 1 pod (or sub 1/2 tsp alcohol-free vanilla extract)
2-3 tbsp unsweetened almond or coconut milk
2 tbsp melted coconut oil
1 tsp lemon juice (optional)
6 whole red apples, such as gala or fuji
6 popsicle sticks

Toppings:
1/2 cup chopped nuts - almonds, pecans or any other, very finely chopped
1/2 cup shredded coconut
1/2 cup dried mulberries, very finely chopped

Directions:
Make the caramel by blending together the dates, vanilla bean seeds, almond milk, coconut oil and lemon juice (if using) until smooth. Place the apples on popsicle sticks and swirl them in the date caramel. Alternatively you can use a small spatula to spread the caramel evenly around the apple. Coat the apples in the toppings and serve immediately.

Whether it’s the holidays, the weather is turning cool, or you simply want a big mug of pure comfort, look no further than this delicious Hot Apple Cider. Packed full of healing spices in a delicious base of apple juice, you may find this recipe quickly becomes a weekly staple. The bonus is that it’s so simple and easy to make!

The phytochemicals in apples make them a true brain food, feeding neurons and increasing electrical activity. Apples with red skin contain anthocyanins and even traces of malvidin (a type of anthocyanidin), which are partially responsible for the red color. These pigments have anti-obesity properties and compounds that increase digestive strength, encouraging weight loss.

Hot Apple Cider

Ingredients:
3 cups unsweetened apple juice
4 cinnamon sticks
2-3 orange slices
6-8 whole cloves
1/2 tsp ground cardamom
1/4 tsp ground nutmeg

Directions:
Place the apple juice in a medium-sized saucepan and bring to a simmer. Add the cinnamon sticks. Press the cloves into the orange slices and add to the pot, together with cardamom and nutmeg. Simmer for 20-30 minutes, then remove the cinnamon sticks and oranges from the pot. Serve immediately.

APPLES: Provide living water to support the liver’s hydration capabilities, so it can store the water and then release it back into the bloodstream when dehydration or dirty blood syndrome occurs. The fruit acids in apples help cleanse the liver by dispersing toxic films that build up inside its storage banks. Apples starve out bacteria, yeast, mold, other funguses, and viruses from the intestinal tract and liver. Great for dissolving gallstones.

DATES: The intestinal tract builds up mucus due to low hydrochloric acid and bile production, and that can slow down absorption of nutrients into the bloodstream. Dates expel and eliminate mucus, especially that produced by pathogens such as bacteria and fungus, from the colon. The sugars in dates feed the liver; they’re a great source of glucose for recovery and restoration that allows the liver to maximize its over 2,000 chemical functions.

CELERY: Its undiscovered subgroups of sodium that I call cluster salts protect the liver’s cell membranes and inhibit the growth of viruses, bacteria, and fungus. Celery restores the liver’s bile production capability as well as the potency and complicated structure of the bile, which in most people is completely imbalanced. Its cluster salts bind onto freefloating poisons and toxins inside the liver and flush them into the bloodstream, remaining bonded so that the troublemakers leave the kidneys or intestinal tract safely. Celery purges the liver while bringing down liver heat to a safe level. It’s the ultimate gallbladder rehabilitator, helping to dissolve gallstones over time, making them small enough either not to cause harm or to be able to pass through the bile duct. Celery’s sodium also expands the bile duct so it’s not restricted, in case a large stone does breach.

Liver Rescue Applesauce

Ingredients:
1 to 2 red apples, diced
1 to 4 Medjool dates, pitted (optional)
1 stalk celery, chopped (optional)
¼ teaspoon cinnamon (optional)

Directions:
Blend the diced red apple and other desired ingredients in a blender or food processor until a smooth, even applesauce forms. Serve and enjoy immediately or squeeze some fresh lemon juice over the top and seal tightly if you’d like to save it for later.

Apple Nachos

Arrange the apple slices on a serving plate. Top with cinnamon, date caramel, walnuts, cranberries and tahini. Serve immediately.
